Chilled Berry Dessert Soup
Excited by the hint of fall in the air, but not quite ready to bid farewell to summer? This chilled berry dessert soup from our Simply Organic cookbook is a perfect way to savor ripe summer berries a bit longer. We tried it last weekend and couldn’t wait to share the recipe!

Summer Fruit Soup
1 quart strawberries, hulled
3 cups orange juice
1 cup dry white wine
Zest of 1 lime
Juice of 2 limes
1/2 cup honey
2 TBS chopped fresh min
3 whole black peppercorns
2 whole star anise
1 cinnamon stick
3 cups fresh raspberries, blueberries or blackberries for garnish
Combine all ingredients (except berries for garnish) in a large saucepan. Bring to a simmer over medium heat and cook 15 minutes. Remove from heat and cool to room temperature. Remove and discard the cinnamon stick and star anise. Season with salt to taste. Pour the soup through a food mill or ricer, discard the seeds and chill broth. To serve, ladle the chilled berry soup over fresh berries arranged in a bowl or wine glass. This and other delicious recipes can be found in our Simply Organic cookbook.
